In the 6th Century AD, Irish monks journeyed to the Middle East and it is thought that it was there they observed how the alembic was used to distil perfume. On returning to Ireland the invented their own version - the 'Pot Still'. This they used to create a new spirit known as 'Uisce Beatha' - 'The Water of Life' BARLEY - MALTED AND UNMALTED
Irish Whiskey is made either from malted barley or from a mixture of malted and unmalted barley and other cereals. In Ireland the malt is dried in closed Kilns unlike in Scotland, where malt is dried over open peat fires.
This, the malting process used for Irish Whiskey not only avoids a smokey taste but also ensures a smooth and natural flavour.

Jamesons Irish Whiskey comes from the John Jameson & Son distillery which was the second largest distilling company in Ireland by the early part of the 19th century. News about the quality of the Jameson whiskeys travelled far and wide and demand was growing not just at home but abroad. The combination of fine whiskey ingredients and superior distilling processes was making quite a name for Jameson whiskeys worldwide. In 1858, a blight destroyed France's vineyards and supplies of brandy dried up. Traditional brandy drinkers switched to Irish whiskey, and Jameson sales soared By 1890, Ireland had about 90% of the global whiskey export market and the Jameson distillery was making 10% of Ireland's annual whiskey output. In the early part of the 20th century Jameson Whiskey was dealt two cruel blows. Jameson was a best selling whiskey in America. But after Prohibition in 1919, exports of Jameson to the USA ground to a halt. Jameson had also been the most popular whiskey in the British Empire. After Irish Independence however, English tariff barriers priced it out of the market. Without overseas demand, all 400 Irish whiskey brands fell into decline. Jamesons Irish Whiskey 12 Year Old 1000ml
Jamesons Irish Whiskey 12 Year Old is matured in seasoned oak casks crafted by coopers, and remains undisturbed for many years. Casks are vatted together in order to create blended Irish whiskey and this is then bottled to complete the whiskey production process. Triple distillation is the key to Jameson's smoothness. Distilling creates new whiskey from a Wash, heated in traditional large copper pot stills. Jameson is obtained only after three separate distillations, thus lending the epithet of triple distillation. Each stage results in a smoother, superior quality Malted barley is barley that has been allowed to sprout for a few days and then dried. Jameson's malt is dried in closed kilns to ensure a smooth natural taste. The absence of smoke in the malting process ensures that the clean taste of the malt and barley shine through to the final whiskey. The paradox of barley is that it doesn’t contain fermentable sugar; just starch. Early distillers discovered that if barley is allowed to sprout under spring-like conditions for a few days and then dried, the amount of alcohol subsequently obtained from brewing and fermentation is vastly greater than normal.
