If brandy drinkers are heroes, cognac is reserve for the gods and goddesses. The Cognacais observe that all cognac is brandy, but not all brandy is cognac, thus distinguishing their product from the rest of the world's - including the rest of France's. Brandy, or burnt wine is made in varying quality, mostly your rudimentary pain killer. Brandy that is entitled to the name cognac comes from one French Valley. Cognac has been a drink traditionally reserved for special occasions - like Champagne. Unlike Champagne it always is served after a meal with ceremony.
Cognac's appearance was accompanied by special camaraderie and defines the end of a meal. In the old days it was enjoyed by men only - women were offered sherry. The mystique extends to cognac, the town and region. The spirit of cognac literally pervades the air and leaves a dark patina on the walls of the town and in the cellars where the liquor is aged.
Because the oak barrels in which cognac acquires its taste and colour are porous, about 2 to 3 percent of the maturing cognac evaporates out into the air. The region of Cognac is on the Atlantic coast of France in the provinces of Charente and Charente - Maritime, 200 miles southwest of Paris, fronting on the Bay of Biscay.
The Gironde River forms the border between Cognac and Bordeaux to the south. The heart of Cognac production is in the Charente Valley, and six crus, or cognac making areas, which were delimited by the government in 1909,are arranged in roughly concentric circles from east to west. They are ranked in quality from one to six.

Hine Antique Grand Premier XO Cognac has a caramel, dates, prunes and molasses flavour. Exotic fruits, cocoa beans, slight rubbery tinge, rose water, sour mix sweets and old varnish. When water is added there is less molasses and more exotic soft fruits. The palate is smooth, soft and velvety, simply like toasted Turkish delight – lovely ! Water creates a slightly more cinnamon impression but still incredibly like Turkish delight.The finish is short and sweet, more Turkish delight and exotic fruit notes.Overall without knowing the spirit, it was assumed to be like Guyana rum on the nose. On the palate it seems one dimensional but it is soooo like Turkish Delight!

Paul Giraud Cognac Elegance....The Giraud family have been growing grapes around France since 1650, yet only decided to produce Cognac under their own name in the 1980s. A long time associate of Giraud informed us 'Giraud became frustrated selling his thirty-five year old cognacs to Remy-Martin. His cognac was destined to become a part of the blend, Louis XV [currently selling for around A$2000.] This was a very brave move during such times - he was one of the first to do so, but we are thankful he did, he paved the way for many more to come.' Produced from Ugni Blanc, Folle Blance and Colombard grapes grown on the Giraud family's vineyards located in the heart of Grande Champagne, Giraud's Elegance Cognac is quite unlike any of the equivalent age offerings from Remy, Martell, Courvoisier and Hennessy. Unlike the commercial houses, Giraud produces exclusively from grapes grown in the Grande Champagne appellation - the finest in Cognac, thus maintaining a regional focus and a degree of elegance, and a bright, fresh character that we have not seen before at this price point. Pale golden colour with very pale, almost water like hue. Lifted nose of dried flowers, dates, peach, apricot, almond and spice. Lively palate entry, delivering flavours of dried apricot, almond and spice, with subtle hints of honey. Excellent balance. The flavour profile fans out gently over the back palate, finishing spicy with a slight prickle. Warming aftertaste of almond, apricot and spice. Distinguished at this price point. 40.0% Alc./Vol.
