The Shiraz Mataro blend has a distinctive texture and flavour. Yet every style grape variety being the Shiraz emerged from elegant, peppery cool climate styles Heathcote in Victoria to more intensely flavoured spicy styles of Coonawarra and Margaret River to powerful and minty Clare Valley, sweet and chocolaty McLaren Vale, muscular, and ripe-fruited Barossa, and leather and rich Hunter Valley. Shiraz, which has traditionally been blended in both cool and warm climates with Mataro grape varietal is al warm climates.
Mourvèdre, Mataró, or Monastrell as pronounced depending on which country origin this variety is grown is a grape used to make both strong, dark red wines and rosés. It is an international grape variety grown in many regions around the world. Mourvedre produces tannic wines that can be high in alcohol, and is most successful in Rhone-style blends. It has a particular affinity for softening it and giving it structure. Its taste varies greatly according to area, but often has a wild, gamey or earthy flavour, with soft red fruit flavours.
Mourvèdre is the name used in France; Mataró is used in Portugal and parts of the New World; and Monastrell is used in Spain. In English-speaking wine producing areas, Mourvèdre is most commonly used and is the official name used by the U.S. Though the grape was originally named after a Spanish town, the word "Mourvèdre" is of French derivation.

The aim is to produce a fruit forward, soft and spicy red wine, which exhibits the regional expression of Margaret River and varietal intensity of Shiraz. Cape Mentelle Marmaduke Shiraz Mataro has a rich juicy berries with pepper and spice are the hallmark characteristics of this wine style. Cape Mentelle Marmaduke Shiraz Mataro appearance is dark red with crimson hues. The nose has a core of blueberry and red cherry greets the nose with clove and fresh liquorice. Cape Mentelle Marmaduke Shiraz Mataro has hints of vanilla pod, lavender and ground white pepper provides further complexity. Cape Mentelle Marmaduke Shiraz Mataro palate is dense and dark blueberry with mocha and star anise. The concentrated fruit has a line of earthiness and is carried well with balanced savoury tannins and a long bright finish. Cape Mentelle Marmaduke Shiraz Mataro is ideal with slow-braised oxtail with chestnuts, nameko mushrooms and black truffle. Rolf Binder Pressings Shiraz Mataro is a 'Swaggeringly powerful', 'swaggeringly textured fruit', 'super rich and multi layered' - these are some descriptors enthusiastic Bulls Blood drinkers have use for this blend of Shiraz and Mataro pressings.Veritas Bulls Blood Shiraz Mataro Pressings is a wine that has been made by Veritas for some 40 years, it is a blend of two great varieties, Shiraz and Mataro. To give more intensity to the wine only the pressings component is used. A gentle press on the original continuous press (circa 1940) ensures the fruit doesn’t become extracted - certainly a case of less is more.The press now housed in the new winery on Seppeltsfield Road, is where we get the pressings that go to make up the Bulls Blood.Such flavours and aromas as Christmas pudding, spicy juicy fruit, earthy flavoured and perfumed are prevalent in this wine. Certainly one to enjoy with a long slow braise of lamb, venison or beef. Put some in your cellar for another 10 years and enjoy it with a bit of age. Dry. Dry. Dry. The Winter and Spring of 2006 leading up to vintage was the driest recorded since 1914.recorded since 1914. Spring and summer temperatures were up by a couple of degrees, bringing the harvest period of whites forward by approximately three weeks. This extra heat enhanced the flavours in the grapes although with lower degrees Baume overall. The vinification is both hand pruned and hand picked, the Bulls Blood is fermented in open fermenters with pump overs twice daily, resulting in a seven day fermentation process. This results in maximum flavour, colour and tannin extraction with both the hot ferment and pumping over stabilising tannin structure. At the end of fermentation on skins the juice is drained off. The remaining skins still contain a large amount of fermenting juice and due to the contact with the ripe skins contain wonderful, rich flavours. The skins are gently pressed . The final pressure on the cake is soft, giving an almost gentle ‘basket press’ effect. After pressing the wine is fermented to dryness, racked and placed in mostly shaven French oak with a small proportion of shaven American oak. Winemakers comments ... "The 2007 Shiraz-Mataro Pressings has sup “I find Mataro a very exciting variety to crush and make wine from. The spicinessof the juice is a major drawcard; however to me, the fascination is that point in the fermentation where the true spiciness of Mataro emerges.
