Australian Red Wines > Shiraz
Shiraz also known as syrah and hermitage. The flavours contained in the dark skin rise in tandem with sugars in the pulp and often shiraz can be picked with excellent sugar - acid balances and intense colour and flavour. The conditons in Australia are capable of producing high quality shiraz.Shiraz the full dark, dark, rich and fruity wine has a natural low tannin softness and combines perfectly with american Oak during maturation to provide one of Australia's richest and most enjoyable wine styles. That is why in the early days of Australian wine making, shiraz was often called 'burgundy' as it was soft, round and mellow, reminiscent to the new settlers of the supple wines of Bourgogne (Burgundy) France.
| Torzi Matthews Frost Dodger Eden Valley Shiraz 2003 Eden Valley Region South Australia 750 x 1 2 : This wine is truly hand crafted and is in limited supply due to the very low production as a result to frost which contributes to very low yields of approximately one ton per acre. The wine is made using traditional Italian and French techniques which include Appassimento, that is "dry racking" the shiraz prior to crushing and also using whole bunches during fermentation. Only wild natural yeast on the skins of the fruit is used to start natural fermentation nor do they use acid, oak chips and filtration, it comes down to letting the vineyard express its self glory. The wine is basket pressed and aged in French and American oak hogsheds for 18 months.Overall the winemaking is unusual and very clever ... highly individual, highly considered, handmade little beauty. One sip and you know that you are tasting something special.- Campbell Mattinson, Gourmet Traveller Wine Magazine, June/July 2005."Deep,dense licorice. Dry and controlled. Like sucking on a black jelly bean dipped in raspberry.Edges of hay and yeast. Ripe. Not over cooked. Simple for now, but silken, and with sleeves of unborn complexity. A lovely wine. This is the work of a very fine producer - Drink now - 2012. 92 points. Campbell Mattinson, Winefront Monthly."Lots of concentration, not just alcohol. Dense, sleek and savoury. These people obviously have a philosophy and are not just copying everyone else. I'd lap this up - a cold day, with food.. Great Stuff. 18/20 Drink 2005 - 2010 Jancis Robinson M.W.
