Pegasus Bay Cabernet Merlot ....This blend of classic claret varieties consists of cabernet sauvignon, merlot, cabernet franc and malbec. It was made in the traditional Bordeaux manner by draining the fermenting wine from the bottom of the tank with aeration and returning it back over the floating cap of skins.

Natural malolactic fermentation, ageing in oak barriques for 18 months and clarification without filtration add to its character. It is full of spicy cassis, black plums, vanilla pod and smoky black olive.

The structure is generously plump but yet supple. It has good ripe tannins which will help it mellow and age gracefully.It is believed that this is one of the best that the winery has produced.

Pegasus Bay Cabernet Merlot.....Has a floral and sweet berry fruit nose (from some cabernet franc), and with mint, berry fruit and smoky oak flavours. It has good balance with ripe tannins and opens up in the glass, which confirms its ageing potential. - Graham Barrow, The Northern Advocate.
